While shopping the options in the cheese section at the store, I knew I had to make a Roth Horseradish Havarti mac and cheese. I love all the different flavors Roth incorporates into their cheeses and the horseradish havarti is the perfect spicy smoky flavor perfect for a bowl of cheesy pasta.

Horseradish Havarti is the closing cheese for this pasta. The havarti closer flavors paired with the smoky pepper of the horseradish finish out a bowl beautifully. I used Roth brand, but there are tons of other options you can use. You could probably buy horseradish and add it to the sauce if you can’t find horseradish cheese. It’s your meal. Go where your heart leads.
Extra sharp cheddar, an old favorite, is the bowl opener. I snag the generic Kroger version at my local Dillons, but Cabot makes a great option as well as Tillamook. Cheddar comes in orange and white options. There’s really no difference between the two except orange has an additional natural coloring derived from seed pods. It doesn’t matter if you use an orange or white cheddar, just stick with a longer aged version.
So many toppings would go great with this, but I stuck with crispy jalapenos for a crunchy, spicy addition to the dish. Other great options would be green onions, toasted bread crumbs, or crispy onions. Roth horseradish havarti mac and cheese is perfectly customizable to anything you’re feeling. Grilled chicken, bacon, or even salmon would be perfect topping meat options.
Roth Horseradish Havarti Mac and Cheese
Ingredients
- 16 oz Pasta
- 2 tbsp Butter
- 2 tbsp Flour
- 2 cups Whole Milk
- 1 cup grated Roth Horseradish Havarti
- 3/4 cup grated Extra Sharp Cheddar Cheese
- salt to taste
- Crispy Jalapenos
Instructions
- Prepare the pasta according to package directions.
Prepare the sauce
- Pre heat your milk in the microwave for 45 seconds – just enough to take the chill out of it.
- Melt butter in a sauce pan over medium heat and let it heat until it becomes foamy.
- Mix in flour. Make sure flour and butter are fully combined before moving to the next step.
- Slowly add warmed milk to the butter mixture 1/4 cup at a time. Whisk it continually until combined.
