I’ve been in love with mac and cheese for as long as I can remember. Like most kids, mac and cheese was solidly on the limited list of foods that I would gladly eat. Unlike most kids, I never outgrew my desire to have it for as many meals as possible.
A chance encounter with a roux-based recipe found in a waiting room magazine changed my life. Gourmet mac and cheese was well within reach. With newly discovered adult money, I began to experiment with the qualities of different cheeses and what makes great mac and cheese.
During the pandemic, I needed a creative outlet. I wanted something fun to do. And there isn’t anything more fun than mac and cheese. This led to the creation of this website. Mac and Cheese Club is where I wax poetic about the best food in the world. It’s packed with gourmet mac and cheese recipes, store brand reviews, and exploration of restaurant offerings. Our goal is to show people that “fancy” mac and cheese can be approachable for even the most inexperienced beginner.
I love to explore all things related to mac and cheese. Is there true value in using bronze-cut pasta as opposed to a more conventional type of pasta? How many recipes can I mac-ify? How far can I stretch the definition of mac and cheese? The limit may never exist.
